The Captain cooked some Fried Rice for Dinner. And did all the dishes. :D

Bit bland so I mixed some Hot Chili Sauce into it. Very nice, but over an hour later I'm expecting the EPA to crash through the door in hazard suits any second.

As my Dad used to say, a bit more choke, that would have started. :P

After what you said (to/about her within earshot) the other night, those brown bits in the rice wont be roast pork. Enjoy the next few hours on the Sh1tter.... :P

I have very good guts. Nothing she is capable of holding down would cause me the least bit of difficulty. Notable exceptions would apply.

Cooking some chicken with cranberry sauce, cheese and spinach for the boarders, with salad on the side.

For me, I got a big chunk of rib eye on the bone, put some habanero tobasco sauce on each side plus some slap your mama seasoning to boot. Just letting the flavours soak in at room temp before I cook it in the cast iron skillet. :D

OK, my basic chili recipe is a corruption of a texas red.

Portions are variable according to taste, I don't do measurements.

Ingredients
6-12 habenero chili's
handful of birdseye or jalapeno chilis
2 large red capsicums
diced blade or chuck steak
onion
can of Budweiser (VB will do)
plain flour
ground cayenne pepper
ground cummin
garlic (ground, fresh, paste, whatever)
Salt.

Optional, tin of crushed tomatoes and a can of red kidney beans (this is what separates it from a Texas red)

Method

Slice the Chilies and capsicum lengthwise (keep the seeds) and put em under the grill or bake in the oven til soft.

Put the chilis in a blender with the beer and blend til you got a sauce.

Put the diced steak in a bag with plain flour, cayenne pepper and salt and shake to coat.

Slice the onion, brown it in a deep cast iron pan (I use a cast iron camp oven on the gas range) with some oil.

Tip in the floured steak and brown. Add Cummin and Garlic.

Tip in the blended chili beer sauce, stir it up til boiling then simmer for at least 2 hours with a lid on. (at this stage, tip in the tomatoes and kidney beans if you want them. I like them. A large handful of chopped mushrooms also goes OK)

Stir frequently, add more beer (or water if you're a sook) if it starts to dry out.

It's better if you rest it til the next day in the fridge but...............

Serve over rice or cornchips with grated cheese.

Don't blame me if your arse burns next day. :P
